BLACK BEAN PATTIES

  INGREDIENTS: 3c.   black beans ,  drained and rinsed ⅓c.   onion, tiny diced 2   garlic cloves ,  minced 2   chipotle peppers,  diced 2T.  adobo sauce 1T.  tamari 1T.  balsamic vinegar 1t.  cumin ½t.   sea salt ½t.  ground pepper 1   egg 1c.  bread crumbs olive oil ,  for basting grease grill rack very well  Hamburger buns Yummy toppings DIRECITIONS: – COMBINE & MASH together - beans, onion, garlic, chipotles, adobo sauce, tamari, balsamic, cumin, salt, and pepper.   – ROLL - in bread crumbs, keep a little wet, if too wet chill in fridge    MAKE 6 Patties  – HEAT SKILLET MED. - brush with oil and cook burgers 5 min. per side to Char. or  –  GRILL 4 Min. each side.  – SERVE WITH - Favorite fixing's

Tilapia Taco's

 INGREDIENTS: 4 Tilapia filets butter or oil salt + pepper  garlic powder Italian seasoning  a pinch of cayenne.  or marinate in Italian dressing 30 min.  FISH MAKINGS: Bake 400 degree's or GRILL for aprox. 3 minutes on each side, until flakey.  FIXINGS: - Warm tortillas Prepare Toppings: Fresh Cilantro, chopped Tomatoes, diced Lettuce /Cabbage, shredded Carrots, shredded Lime wedges Mango Salsa: (2 mango, small purple onion, 2 lime, 2-3 tomatoes, cilantro, garlic salt, garlic powder, dash of hot sauce) Ranch dressing or Tartar Sauce Mozzarella Cheese, shredded

Salmon w/ mexican relish

INGREDIENTS: 1 c. corn 1 can black beans, rinsed 2T. olive oil 2T. lime juice 1/4c. red bell pepper, diced 1/4c. green bell pepper, diced 2 tomatoes, diced 1/4c. scallions, diced 2T. cilantro, chopped 1/4 Jalapeño chili, minced (to taste) 1/4t. cumin salt + pepper to taste FISH MAKINGS: 4 Salmon Filets melted butter or oil Salt and Pepper seasoning Bake 400 Degree's or grill  20 minutes, until flakey 

Salmon w/ Pineapple Mango Salsa

 SALSA INGREDIENTS: 1/4 c. lime juice 1/4 c. olive oil 2 c. soy sauce 3T. shallot 1/2c. pineapple diced 1/2c. Mango, diced 2 large plum tomatoes, diced 1/4c. fresh basil SALMON MAKINGS: 4 salmon fillets olive oil salt and pepper to season Bake or Grill Salmon 350F 30-40 minutes, until flakey – Serve with Salsa – Serve with Broccoli or roasted Brussel Sprouts

Grilled Salmon and Asparagus

 INGREDIENTS: 4 Salmon Filets 1 lb. asparagus 2 1/2 Tablespoon olive oil 2 garlic cloves 1 Lemon, sliced rosemary, salt and pepper FOIL OVEN:  1- lay asparagus, drizzle oil, season salt and pepper 2- lay salmon, drizzle oil, drizzle lemon, season salt, pepper, rosemary      3- fold foil nice and tight, and cook 25-30 minutes on campfire or omit foil and cook straight on grill.
