Salmon w/ Pineapple Mango Salsa

 SALSA INGREDIENTS:

1/4 c. lime juice
1/4 c. olive oil
2 c. soy sauce
3T. shallot
1/2c. pineapple diced
1/2c. Mango, diced
2 large plum tomatoes, diced
1/4c. fresh basil

SALMON MAKINGS:

4 salmon fillets
olive oil
salt and pepper to season
Bake or Grill Salmon 350F 30-40 minutes, until flakey
Serve with Salsa
– Serve with Broccoli or roasted Brussel Sprouts
