Salmon w/ mexican relish
INGREDIENTS:
1 c. corn
1 can black beans, rinsed
2T. olive oil
2T. lime juice
1/4c. red bell pepper, diced
1/4c. green bell pepper, diced
2 tomatoes, diced
1/4c. scallions, diced
2T. cilantro, chopped
1/4 JalapeƱo chili, minced (to taste)
1/4t. cumin
salt + pepper to taste
FISH MAKINGS:
4 Salmon Filets
melted butter or oil
Salt and Pepper seasoning
Bake 400 Degree's or grill 20 minutes, until flakey
